7 Measuring Mistakes That Are Silently Ruining Your Baked Goods

After helping a friend troubleshoot her consistently flat banana bread, I started cataloguing the measuring mistakes I see most often. The recipe was fine. The problem was in how she measured. Here are seven errors that silently sabotage baked goods.

Mistake 1: Scooping Flour Directly from the Bag

A compacted cup of all-purpose flour can weigh up to 180g instead of the standard 120g - 50% more flour than intended. Fix: Spoon flour loosely into the cup and level with a straight edge, or weigh it. Use our 100g converter to cross-check.

Mistake 2: Measuring Liquids in Dry Cups

Heaped tablespoons of baking powder can double the amount called for. Fix: Always level with a straight edge. Weigh critical leavening: 1 tsp baking powder = 4g.

Mistake 4: Packing Brown Sugar Without Being Asked

Loosely spooned brown sugar can be 30-40% lighter than packed. Fix: Read the recipe carefully. When in doubt, weigh: packed brown sugar = 220g per cup.

Mistake 5: Using a Cold or Uncalibrated Scale

Budget scales can drift, especially when cold, and may be unreliable below 2-5g. Fix: Let your scale stabilise 30 seconds after switching on. For quantities under 5g, use measuring spoons.

Mistake 6: Ignoring Cocoa Powder Variability

Cocoa powder varies from 85g to 120g per cup depending on brand and type. Fix: Always weigh cocoa powder and sift it before adding.

Mistake 7: Using the Wrong Size Egg

Recipes assume large eggs (~50g each without shell). Medium eggs are 5-8g lighter each. In a 4-egg recipe, that is up to 32g less liquid. Fix: Use large eggs, or weigh cracked eggs - aim for 50g per egg required.
